Liver Cookies
1 Kg chicken liver
½ cup butter
1 small bottle marmite or Bovril
Parsley and garlic to taste
3 cups water
2 cups white flour
2 cups brown flour
2 cups mielie meal
2 eggs
Liquidise liver and add all wet ingredients
Add flour gradually – stir and mix well
Pour onto a large greased and floured baking tray
Cook at 160
As soon as it appears to be getting hard/formed – in the tray cut into four
Keep cutting into smaller and smaller squares to avoid crust forming
When it appears to be cooked turn out in dish, any wet or underdone pieces rotate and replace to dry to suitable texture according to taste
